Abstract The aim of this study was to evaluate the efficiency of the ultrafiltration process (UF) in the cleansing treatment of the tilapia surimi washing water and in the recovery of components. After producing surimi, the water generated in the washing operations was subjected to UF in a 30 kDa polyethersulfone membrane. Unfiltered washing waters and UF permeate and concentrate were analyzed for pH, total solids (TS) and fixed solids (FS), total proteins, and lipids. The chemical oxygen demand (COD) was determined in the original water and in the permeate. The concentrate was dehydrated in a spray dryer and analyzed for amino acids and carotenoids. The permeate showed a significant decrease in TS, proteins and COD, indicating that UF was efficient in removing the organic load from the waters. The percentage of protein recovery by UF was 93.12% and the dehydrated concentrate had all the essential amino acids, being leucine (5.47%), lysine (6.49%), valine (3.59%), and phenylalanine (3.68%) those with the highest concentrations, and also 0.67 mg/100 g of carotenoids. The application of UF has proved to be viable both in the recovery of valuable compounds and in the decontamination of water, contributing to the sustainability of the fish productive sector.

Abstract This study aimed to investigate if the inclusion of different spices in bovine burger affects bacterial growth, lipid oxidation and sensorial characteristics of the products. Four hamburger formulations were prepared: control (without additives), saffron (1%), ginger (1%) and urucum (1%). The products were analyzed for total bacterial count (TBC) on days 0, 7 and 15 (storage at 4 °C) and 0, 15 and 60 (storage at -30 °C) and, for rancidity, on days 0, 30 and 60 (storage at -30 °C). The acceptance of the sensory attributes and the purchase intent were evaluated using hedonic scales. All burgers formulated with spices and kept at 4 °C had lower TBC than the control formulation, whereas for those stored at -30 °C, the same occurred only with the ginger-made ones. Lower lipid oxidation was found for the formulations containing the spices. Control and ginger formulations led the acceptance of the tasters for the attributes appearance and color, besides that, aroused greater interest in the purchase intention trial. It was concluded that the addition of spices reduced TBC and delayed the lipid oxidation of hamburgers, and that the products elaborated with ginger had the highest sensory acceptance and purchase intention indexes.

Abstract The proteins recovered by ultrafiltration (UF) represent a co-product of fish industrialization and can be used as a protein ingredient in the fortification of food formulations. The objective of this study was to evaluate the quality of surimi fishburger elaborated with the proteins recovered by UF from the wastewater generated in the production of surimi. The water generated in the washing operations of trims of farmed tilapia (Oreochromis niloticus) were filtered in a 30 kDa polyethersulfone membrane. The recovered proteins were dehydrated in spray dryer and added at 5 and 10% into fishburgers made with tilapia surimi. The fishburgers were evaluated for proximal composition, cooking yield, sensory parameters and acceptability. The incorporation of proteins into the fishburgers improved the sensory aspects of the final product and provided greater acceptability while maintaining the same manufacturing yield. The addition of 10% of the recovered proteins increased the nutritional value of surimi fishburgers.

RESUMO: O objetivo deste estudo foi avaliar o efeito da inclusão de biomassa microbiana sobre a rancidez oxidativa de rações de tilápia armazenadas por 12 meses. Os tratamentos incluíram uma dieta controle e dietas suplementadas com 0,01% de vitamina E 0,01%, com 0,25 e 0,5% de S. cerevisiae e com 0,25 e 0,5% de S. platensis. As dietas experimentais foram armazenadas em sacos plásticos escuros, em temperatura ambiente (25 °C), durante 12 meses. A rancidez oxidativa foi mensurada pelas substâncias reativas ao ácido tiobarbitúrico (TBARS). Concluiu-se que as inclusões de 0,25% (1,734 ± 0,206) e 0,5% (1.629 ± 0.181) de Spirulina platensis e 0,5% (1.459 ± 0.305) de Saccharomyces cerevisiae reduziram a rancidez das dietas em comparação a dieta controle de tilápias-do-Nilo após 12 meses de armazenamento.

ABSTRACT: The aim of this study was to evaluate the effect of the inclusion of microbial biomass on the oxidative rancidity of tilapia rations stored for 12 months. Treatments included a control diet and diets supplemented with either 0.01% vitamin E, 0.25 and 0.5% of Saccharomyces cerevisiae and 0.25 and 0.5% of Spirulina platensis. Experimental diets were stored in the dark inside plastic bags at room temperature (25 °C) for 12 months. The oxidative rancidity was measured as thiobarbituric acid reactive substances (TBARS). It was concluded that the inclusions of Spirulina platensis at 0.25% (1.734 ± 0.206) and 0.5% (1.629 ± 0.181) and Saccharomyces cerevisiae at 0.5% (1.459 ± 0.305) minimized the oxidative rancidity in comparation to control diet (2.843 ± 0.109) of Nile tilapia until 12 months of storage.

Abstract This research aimed at studying the effects of different washing conditions (distilled water x distilled water + NaHCO3 + NaCl) and cryoprotectants (NaCl + saccharose x sorbitol + sodium tripolyphosphate) for the production of tilapia surimi. The experiment used a factorial design 2 x 2 and the variables analyzed were proximate composition, non-nitrogen protein (NNP) removal, texture, color and yield. The protein and moisture contents of the surimi were influenced neither by washings nor by cryoprotectants, while the ash content was higher when NaCl + saccharose were used as the cryoprotectants and the yield was higher when only distilled water was used for the washings. Combining distilled water for the washings and NaCl + saccharose as the cryoprotectants provided the highest lipid and NNP removals. The different treatments produced surimi gels with similar colors and texture.

Resumo O objetivo deste estudo foi avaliar o efeito de temperaturas de desidratação por atomização sobre o rendimento e as características microbiológicas, físicas e químicas de claras de ovos em pó. Os tratamentos utilizados no experimento foram 90 °C, 120 °C e 150 °C, contando com cinco repetições. O rendimento foi determinado pela relação entre os pesos da clara desidratada e in natura. As claras em pó foram analisadas quanto a umidade, proteínas, lipídeos, cinzas, estafilococos coagulase-positiva, Salmonella spp e coliformes a 45 °C. A análise da cor foi feita no sistema Lab e o ΔE foi calculado a partir desses valores. Os resultados foram submetidos à análise de variância e as médias foram comparadas pelo teste de Tukey, utilizando-se nível de significância de 5%. A temperatura de secagem influenciou a umidade das claras desidratadas mas não interferiu nos teores de proteínas, lipídeos e cinzas e nas características microbiológicas. A secagem a 150 ºC proporcionou maior rendimento mas provocou escurecimento e aumento na intensidade do tom amarelo das claras desidratadas.

Abstract The aim of this study was to evaluate the yield, microbiological, physical, and chemical characteristics of powdered egg white obtained by spray drying at different temperatures. The spray drying air temperatures were 90 °C, 120 °C, and 150 °C, with five repetitions of each treatment. Yield rate was calculated by the ratio between powdered egg white and fresh egg white. The powdered egg whites were analyzed regarding moisture, protein, lipids, ash, coagulase-positive staphylococci, Salmonella spp, and coliforms at 45 °C. Color analysis was performed with the Lab space and ΔE was calculated from these values. The data were subjected to analysis of variance and Tukeys test at 5% significance. The spray drying air temperature affected the moisture of the powdered egg whites, without influencing the concentrations of proteins, lipids, and ash, nor the microbiological analyzes. The drying at 150 °C provided higher yield rate, but caused the darkening and the increase in the yellowness of the powdered egg white.

RESUMO: O objetivo deste trabalho foi avaliar o curso da rancidez oxidativa em rações de tilápia do Nilo contendo biomassa bacteriana de Rubrivivax gelatinosus . Foram aplicados seis tratamentos experimentais constituídos de ração basal (controle negativo), ração basal contendo astaxantina (controle positivo) e ração basal contendo quatro concentrações da biomassa bacteriana. As análises de ácido tiobarbitúrico para estimar a rancidez foram realizadas após 6 e 12 meses de armazenamento das rações. Concluiu-se que a biomassa de R. gelatinosus foi capaz de reduzir a rancidez da ração de peixes em 32,52 a 44,72% após 6 meses de armazenamento e em 37,85 a 52,37% após 12 meses de estocagem.

ABSTRACT: The purpose of this research was to investigate the progress of the rancidity in Nile tilapia diets containing bacterial biomass of Rubrivivax gelatinosus . Six experimental treatments comprised basal diet (negative control), diet with asthaxanthin (positive control) and 4 diets with different concentrations of the bacterial biomass. The thiobarbituric acid assay for rancidity analyses were accomplished after 6 and 12 months of diets storage. It was concluded that Rubrivivax gelatinosus biomass minimized the racidity in Nile tilapia diets in 32.52 to 44.72% at 6 months and in 37.85 to 52.37% at 12 months of storage.

Resumo: O objetivo deste trabalho foi avaliar o efeito de temperaturas de desidratação por atomização sobre as características microbiológicas, físicas e químicas de gemas de ovos em pó e sobre o rendimento do processo. A desidratação por atomização foi realizada a 90, 120 e 150°C, com cinco repetições para cada tratamento. O rendimento foi avaliado pela relação entre a quantidade de gema em pó obtida e a quantidade de gema in natura utilizada na secagem. As gemas desidratadas foram analisadas quanto à composição centesimal, à cor objetiva e à rancidez. Para as análises microbiológicas, foi detectada a presença de estafilococos coagulase-positiva, pela contagem direta em placas; Salmonella spp., em amostra de 25 g; e coliformes, a 45°C. A temperatura de secagem por atomização influenciou a umidade das gemas em pó, sem interferir nos teores de proteínas, lipídeos e cinzas, nas características microbiológicas ou na rancidez dos produtos finais. As temperaturas de secagem mais elevadas proporcionam maior rendimento de produto, mas, a 150°C, ocorre escurecimento e diminuição na intensidade da coloração amarela das gemas em pó.

Abstract: The objective of this work was to evaluate the effect of dehydration temperatures by spray drying on the microbiological, physical, and chemical characteristics of egg powder and on the yield of the process. Dehydration was performed by spray drying at 90, 120, and 150°C, with five replicates for each treatment. The yield was estimated by the ratio between the amount of egg yolk powder obtained and the amount of in natura egg yolk used in the drying process. The dehydrated egg yolks were analyzed for chemical composition, objective color, and rancidity. For microbiological analyzes, the presence of coagulase-positive staphylococcus, by direct plate count; Salmonella spp., within a 25-g sample; and coliforms, at 45°C, was detected. The spray drying temperature influenced the moisture content of yolk powder, without affecting the levels of proteins, lipids and ash, the microbiological characteristics, or the rancidity of the final products. Higher drying temperatures produce higher product yield, but, at 150°C, there is a darkening and a reduction in the intensity of the yellow color of yolk powder.

O objetivo deste experimento foi avaliar a influência da variação do nível de energia metabolizável na dieta de frangos de corte, associada a uma variação proporcional da densidade nutricional da ração, sobre o desempenho das aves e sobre a composição da fração lipídica da carne. Foram avaliados separadamente machos e fêmeas da linhagem Cobb 500. Para análise de desempenho, foi utilizado um delineamento inteiramente casualizado em esquema fatorial 6x3, sendo seis níveis de energia metabolizável na ração (2.800, 2.900, 3.000, 3.100, 3.200 e 3.300kcal kg-1) e três idades ao abate (42, 49 e 56 dias). Foi utilizada a metodologia de superfície de resposta para estabelecer um modelo matemático, explicando o comportamento do peso vivo, do consumo de ração e da conversão alimentar. Para a avaliação da composição da fração lipídica da carne, determinou-se o teor de lipídeos totais e de colesterol na carne do peito, na coxa com pele e na coxa sem pele, seguindo um delineamento inteiramente casualizado em esquema fatorial 3x3x2, sendo três níveis de energia metabolizável na ração (2.800, 3.000 e 3.300kcal kg-1 de ração), três idades ao abate (42, 49 e 56 dias) e dois sexos. A redução da energia metabolizável da ração até valores próximos de 3.000kcal kg-1 não afetou o peso vivo, mas, reduzindo a energia da ração abaixo desse valor, o peso vivo diminui. O consumo de ração foi menor quando o nível energético da ração foi mais alto. A conversão alimentar melhorou de forma proporcional ao aumento do nível energético da ração. O desempenho de todas as aves ficou dentro da faixa considerada adequada para a linhagem. A carne de peito apresentou menos lipídeos totais e colesterol que a carne da coxa. O teor de lipídeos totais da coxa com pele foi mais que o dobro da coxa sem pele, mas o teor de colesterol não diferiu com a retirada da pele, demonstrando que o colesterol não está associado à gordura subcutânea. O teor de gordura intramuscular foi menor na carne das aves que receberam a ração com menor nível energético. Essas informações podem auxiliar na definição do manejo nutricional mais adequado. Apesar da redução no desempenho produtivo, a restrição da energia na ração dos frangos pode ser uma alternativa viável, se os consumidores estiverem dispostos a pagar mais por carne com menos gordura

The purpose of this experiment was to investigate the influence of changes in dietary metabolizable energy level, associated with a proportional nutrient density variation, on broiler chickens performance and on the lipid composition of meat. Males and females Cobb 500 broilers were evaluated separately. Performance evaluation followed a completely randomized design with factorial 6x3 arrangement - six energy levels (2,800, 2,900, 3,000, 3,100, 3,200 and 3,300kcal kg-1) and three slaughter ages (42, 49 and 56 days). Response surface methodology was used to establish a mathematical model to explain live weight, feed intake and feed conversion behavior. Total lipids and cholesterol were determined in breast meat and in thigh meat, with and without skin. For lipid composition analysis, a 3x3x2 factorial arrangement in a completely randomized design - three ration's metabolizable energy levels (2,800, 3,000 and 3,300kcal kg-1), three slaughter ages (42, 49 and 56 days) and two sexes - was used. The reduction in the diet metabolizable energy close to 3,000kcal kg-1 did not affect live weight, but below this value, live weight decreased. Feed intake was lower when the dietary energy level was higher. Feed conversion was favored in a direct proportion to the increase of the energy level of the diet. The performance of all birds was within the range considered appropriate for the lineage. Breast meat had less total lipids and cholesterol than thigh meat. Thigh with skin had more than the double of the amount of total lipids than skinless thigh, but the cholesterol content did not differ with the removal of the skin. Intramuscular fat content was lower in the meat from birds fed with lower energy level ration. This information may help to define the most appropriate nutritional management. Despite the decrease in bird's productive performance, the restriction of energy in broiler chickens feed may be a viable alternative, if the consumers are willing to pay more for meat with less fat

A análise de perigos e pontos críticos de controle (APPCC) é uma das principais ferramentas utilizadas atualmente para a garantia da inocuidade, qualidade e integridade dos alimentos. O objetivo deste trabalho foi elaborar e implantar o sistema APPCC no processamento do leite tipo A pasteurizado. Por meio da aplicação de listas de verificação, foi avaliado o nível do programa de pré-requisitos e o panorama sanitário do estabelecimento, e o material gerado serviu de suporte para a implantação do sistema. O modelo de "árvore decisória" foi utilizado para a determinação dos Pontos Críticos de Controle (PCC), tendo sido identificados como PCC biológicos as etapas de pasteurização e envase e nenhum PCC químico ou físico. Para os PCC identificados, foram estabelecidas as medidas preventivas e corretivas, os limites críticos e os procedimentos de monitoramento e verificação. O programa de pré-requisitos foi fundamental para o estabelecimento do sistema. A implantação do plano APPCC no processamento do leite pasteurizado tipo A foi eficiente no controle dos perigos identificados e possibilitou ao produto atingir as especificações legais e alcançar a segurança.

Hazard analysis and critical control points (HACCP) is one of the main tools currently used to ensure safety, quality and integrity of foods. So, the aim of this study was to develop and implement the HACCP program in the processing of pasteurized grade A milk. Checklists were used to assess on the level of the pre requisites programs and on the sanitary classification of the dairy industry and the results were used as references for the development of the HACCP system. A "decision tree" protocol was used for the identification of the critical control points (CCP). No physical or chemical CCP were identified, whereas pasteurization and packaging were considered biological CCP. For these CCP, the limits for prevention, monitoring needs, corrective actions, critical limits and verification procedures were established. The pre requisites program was essential for the establishment of the system. The implementation of the HACCP for the processing of grade A pasteurized milk was efficient to control the biological hazards and enabled the product to comply with the legislation specifications and achieve safety.

O uso de corantes em produtos de origem animal justifica-se pela melhora na cor dos alimentos, uma vez que este atributo é considerado um critério de qualidade. Estes aditivos podem ser produzidos utilizando efluentes industriais como substratos e organismos adequados, como Rubrivivax gelatinosus. Oxicarotenóides representam uma classe de carotenos, responsáveis pela coloração de animais e vegetais. R. gelatinosus cresce em efluente de indústria de pescado produzindo biomassa contendo oxicarotenóides. O objetivo deste experimento foi comparar duas metodologias para obter a biomassa seca - atomização e liofilização - em relação aos parâmetros do processo (rendimento, produtividade, recuperação) e sobre as características dos produtos (cor, composição centesimal, oxicarotenóides). As técnicas não diferiram quanto ao rendimento, enquanto que a produtividade foi maior para a atomização. A maior recuperação e a maior umidade foram obtidas pela liofilização, enquanto que a concentração de cinzas foi maior com a atomização. A biomassa liofilizada foi mais vermelha, mais escura e de cor menos saturada. Não houve diferença entre os conteúdos de oxicarotenóides. Embora resulte em uma menor recuperação, a atomização foi mais rápida, mais produtiva e apresentou rendimento equivalente à liofilização, o que a torna o método de escolha para a obtenção de biomassa de R. gelatinosus.

The use of colorants in products of animal origin is justified by the improvement in the color of foods since this attribute is considered a quality criterion. These additives can be produced using industrial effluents as substrates and appropriate organisms, such as Rubrivivax gelatinosus. Oxycarotenoids represent a class of carotenes responsible for the pigmentation of animals and vegetables. R. gelatinosus grows in fish industry effluent with the resulting production of a bacterial biomass containing oxycarotenoids. The purpose of this study was to compare the use of two drying processes - spray and freeze drying - to obtain powder biomass in terms of the process parameters (yield, productivity, and product recovery) and the product characteristics (color, proximate composition, and oxycarotenoids). No difference was detected in the yield between these techniques, while productivity was higher using spray drying. Higher product recovery and moisture were achieved with freeze drying, while ash was higher with spray drying. The freeze dried biomass was redder, darker and less saturated than the spray dried biomass. No difference in oxycarotenoids was detected between the biomasses. Although it results in lower recovery rate, spray drying was faster and more productive, and it provided the same yield as freeze drying, which makes it the method of choice for obtaining R. gelatinosus biomass.

A padronização da textura é um dos principais problemas relacionados à qualidade da carne bovina. Por isso, a avaliação objetiva da maciez, por métodos mecânicos, vem sendo estudada há muitos anos. Para que a avaliação instrumental da textura seja uma ferramenta efetiva nos estudos envolvendo a maciez da carne, é necessário minimizar as causas de variação envolvidas na análise. Atualmente, a força de cisalhamento Warner-Bratzler é o método mais amplamente empregado para essa finalidade. O protocolo padrão dessa técnica analítica preconiza a utilização de uma lâmina de cisalhamento de 1,016mm de espessura. Neste trabalho, foram comparados dados de textura de carne bovina obtidos com a lâmina de cisalhamento padrão Warner-Bratzler, de 1,016mm de espessura, e uma lâmina mais grossa, de 3,05mm de espessura. Após o abate, amostras de músculo Longissimus dorsi, semelhantes em relação aos teores de umidade, lipídeos e proteínas, foram submetidas a duas diferentes temperaturas de resfriamento, atingindo diferentes velocidades de queda de temperatura e, consequentemente, diferentes graus de contração do tecido muscular, o que foi confirmado pela determinação do comprimento dos sarcômeros. Os resultados demonstraram uma maior sensibilidade da lâmina padrão Warner-Bratzler na detecção de variações da textura da carne, em função da velocidade de resfriamento.

Standardization of texture is one of the main problems related to beef quality. Because of that, objective evaluation of tenderness performed by mechanic methodologies has been studied for years. In order to count on instrumental texture evaluation as a valuable tool in meat tenderness studies, it is necessary to minimize the causes of variation that might be involved in the trial. Nowadays, Warner-Bratzler shear force is widely used for meat tenderness determination. The standard protocol of this methodology establishes the utilization of shear blade 1.016mm tick. The aim of this study was to compare beef texture data provided by Warner-Bratzler standard shear blade, 1.016mm thick, with those provided by a thicker one, 3.05mm thick. After slaughtering, Longissimus dorsi muscle samples with similar contents of moisture, lipids and proteins were subjected to two different cooling temperatures,reaching different rates of temperature drop and hence different muscle contraction extents, which were confirmed by the determination of sarcomere length. Results indicated the superior sensibility of the Warner-Bratzler standard shear blade to detect variations in meat texture due to cooling velocity.

O objetivo deste trabalho foi avaliar o efeito da utilização de óleo de linhaça, em substituição ao óleo de soja, sobre a produtividade e a qualidade da carne de frangos de corte de ambos os sexos. Foram utilizadas 320 aves, em um arranjo fatorial 4x2 - quatro combinações dos períodos de fornecimento de óleo de soja e óleo de linhaça e dois sexos - e quatro repetições. O desempenho produtivo foi avaliado por pesagens da ração e das aves com 1, 21, 42 dias e no momento do abate, aos 49 dias de idade. Após o abate, foi avaliado o rendimento de carcaça e sua composição: cortes, vísceras e gordura abdominal. Foram determinados os teores de lipídeos totais, umidade e colesterol da carne. A dieta contendo óleo de linhaça melhorou a qualidade nutricional da fração lipídica da carne de frango, mas prejudicou o desempenho produtivo das aves.

The objective of this work was to assess the effect of linseed oil as a substitute to soybean oil on yield performance and meat traits of broilers of both sexes. Three hundred and twenty birds were raised in a 4x2 factorial arrangement, consisting of four receiving periods combinations of soybean oil and linseed oil and two sexes, with four replications. Yield performance was evaluated by weighting feed and broilers aging 1, 21, 42 and 49 days, when they were slaughtered. After slaughtering, carcass yield and composition in main cuts, viscera and abdominal fat were quantified. Total lipids, moisture and cholesterol contents in meat were determined. Linseed diets improved the nutritional quality of the lipid fraction of broilers meat but were harmful to broilers performance.

A carne de capivara tem conquistado espaço no mercado de carnes exóticas, justificando estudos que auxiliem no conhecimento de suas características e no aperfeiçoamento do seu processo de obtenção. Com esse objetivo, neste trabalho, os músculos Longissimus dorsi e Semimembranosus provenientes de animal macho, com idade entre 12 e 18 meses, foram submetidos a procedimentos analíticos visando a avaliar suas características e seu comportamento quanto aos aspectos tecnológicos. A carne apresentou um baixo teor de gordura, de 0,4% e 0,3% para os músculos L. dorsi e Semimembranosus, respectivamente. Foi observada uma correlação inversa (P<0,001) entre o comprimento do sarcômero e a força de cisalhamento. O comprimento de sarcômero do m. L. dorsi, em comparação com o m. Semimembranosus, foi menor (P<0,001: 1,88mim e 2,43mim, respectivamente), e a força de cisalhamento foi maior (P<0,001: 11,2kg e 9,1kg, respectivamente), indicando ser a carne do pernil mais macia que o lombo. Além disso, a partir de aparas e vísceras, foram elaborados produtos cárneos, de acordo com formulações-padrão para hambúrguer, patê e mortadela. Esses produtos foram submetidos à análise sensorial, obtendo uma boa aceitabilidade.

The good rank capybara meat has reached within the exotic meat market justifies studies on its physical-chemical composition and also on the improvement of the production process. With that aim, Longissimus dorsi and Semimembranosus muscles of male animals ageing 12 to 18 months were evaluated about composition and technological properties. It was found a low fat content in capybara meat - 0.4% and 0.3% for L. dorsi and Semimembranosus muscles, respectively. A inverse correlation (P<0.001) was found between sarcomere length and shear force. L. dorsi showed a shorter sarcomere lenght and a higher shear force (P<0.001) than Semimembranosus muscle (1.88 mum and 2.43 mum; 11.2 kg and 9.1kg, respectively), what denotes that capybara ham meat is tenderer than loin meat. Moreover, trimmings and viscera were used in the elaboration of meat products as hamburger, pátê and mortadella. Sensory analysis of those products showed good acceptance.

Carcaças bovinas resfriadas rapidamente podem apresentar uma contração muscular conhecida como encurtamento pelo frio. Esse fenômeno, prejudicial à textura da carne, ocorre principalmente nas fibras musculares oxidativas. O objetivo deste trabalho foi disponibilizar uma ferramenta analítica para distinguir essas fibras e determinar com maior precisão a contração do tecido muscular pela mensuração do comprimento dos sarcômeros. Amostras do músculo Longissimus dorsi de 12 novilhas nelore foram coletadas. As amostras obtidas de uma das meias-carcaças foram submetidas a uma refrigeração rápida, e as amostras provenientes da outra meia-carcaça à refrigeração lenta. Foi testado um método analítico, baseado na técnica de coloração por Nicotinamida Adenina Dinucleotídeo - Tetrazolium Redutase (NADH-TR), para mensurar, por microscopia, o comprimento dos sarcômeros das fibras vermelhas. Foram determinadas as velocidades de queda de pH e temperatura, a área do olho de lombo (AOL) e a força de cisalhamento. Os resultados demonstraram que a temperatura é o principal fator responsável pelo comprimento do sarcômero quando a velocidade de resfriamento é rápida, sendo essa influência menor quando a queda de temperatura é mais lenta. Desta forma, demonstrou-se que a técnica de coloração com NADH-TR é capaz de detectar a ocorrência do encurtamento pelo frio nos músculos esqueléticos de bovinos.

Bovine carcasses quickly cooled may develop a muscle contraction known as cold shortening. This process, harmful to meat texture, occurs mainly in the oxidative muscle fibers. This work was aimed at studing an analytical tool to distinguish these fibers and to evaluate, more precisely, the muscle contraction through the measurement of sarcomeres length. Longissimus dorsi muscles of 12 heifers were used as samples. Samples from one of the half carcasses were fast cooled and the samples from the others half carcasses were slowly cooled. An analytical technique based on Nicotinamide Adenine Dinucleotide - Tetrazolium Redutase (NADH-TR) methodology was performed to measure, by microscopy, the red fibers sarcomeres lenghts. Temperature and pH drops in the samples, shear force and rib eye area were also evaluated. Results pointed out that the temperature is the main responsible for the sarcomere length in the fast cooling and that, when slow cooling is performed, the influence of this parameter is less important. These results indicate that the NADH-TR technique is able to estimate cold shortening occurrence in bovine skeletal muscles.
